Poached eggs are one of my top favorite breakfast foods. High in protein and rich in other nutrients they are a great healthy option. Add some avocado and grain-free toast and you’ve got yourself a winner!
What you’ll need for this healthy breakfast:
- Two poached eggs
- A grain-free almond bun (Click here for the recipe), sliced in half and toast.
- One ripe avocado; mine tend to be a little small, if yours are large just use half. (For fresh storage place the other half in an air tight container with a wedge of onion.)
- Salt & Pepper to taste. (Or if you’re feeling like something a bit different I like a sprinkle of cumin and chili powder myself.)
And there you have it, my go-to take on eggs on toast. Enjoy!
