- 200g Almonds; finely ground
- 2 Tbsp Psyllium Husks
- 1 tsp Baking Powder
- 6 Eggs
Preheat oven to 180°C
Mix together dry ingredients, add eggs and combine well. Set aside for 30 minutes for the psyllium husks to hydrate (this mix may seem a bit sticky but it will dry out while baking).
Grease baking tray generously with Coconut Oil or Butter; form mix into 9 buns. These buns are dense so you want to make them reasonably flat; they will rise a little.
Bake for 15-20 minutes.
I prefer these served warm straight out of the oven or sliced in half and toasted in the toaster. Excellent substitute for toast, burger buns, and crumpets.
Where to buy Psyllium Husks?
Psyllium Husks can be brought from most health food stores and some super markets here in new Zealand. Countdown super market is probably the easiest option for most of us (shop psyllium husks here). Almonds can also be brought pre-ground from Countdown here.
