[Recipe] Raw Vegan Chocolate Fudge Loaf

As you are probably aware I LOVE chocolate. Not like, LOVE! The mere act of making anything containing cocoa brings happiness to my soul. Sounds corny I know but it’s true. And this Raw Vegan Chocolate Fudge Loaf is no exception. Very Easy to make and Delicious!

Ingredients

  • 1/2 cup Coconut Oil, heated on low until just melted
  • 1/2 cup Cocoa Powder
  • 1/2 cup Maple Syrup
  • 2 tsp Vanilla Extract/Essence Liquid
  • 1 tsp Turmeric Powder
  • 1 tsp Coriander Powder
  • 1 cup Raw Almonds, Rinsed and Dried off (they’ll still be damp and that’s fine)
  • 1/2 cup Walnuts, Roughly Chopped

 

Grind the rinsed and dried off almonds in a coffee grinder or food processor (I use a Nutri Ninja smoothie capsule which we’ve had for years and that works a treat).

In the sauce pan, you gently melted the coconut oil in, add the cocoa, maple syrup, vanilla, turmeric, coriander and ground almonds. Mix with a fork to combine.

Grease a small metal, plastic or silicone baking tin (I use a metal loaf tin which measures 20cm x 11cm x 5cm).

Pour/scrape the chocolate mixture into the tin with a rubber/silicone spatula and smooth the top.

Sprinkle over the chopped walnuts and press them down gently to help them stick to the fudge (you could also use cashew or macadamia pieces).

Freeze for 2 hours and then you’re ready to enjoy!

Keep leftovers in the freezer to maintain a harder texture.
