[Recipe] Homemade Coconut Oil Chocolate

There aren’t very many thing I love to eat more than chocolate. And this easy to make coconut oil chocolate is no exception!

Method:

  • 1/2 cup coconut oil
  • 1/4 cup  cocoa powder
  • 3 tsp maple syrup
  • 1 tsp vanilla extract liquid
  • 1 tsp cinnamon powder
  • 1 tsp ginger powder
  • 1 tsp coriander powder (optional)
  • 1 tsp Turmeric powder (optional)
  • 1/2 cup cashew nut pieces (OR any other nut/seed you prefer)
  • 1/2 cup sultanas (Or you could add any other dried fruit you like)

In a small saucepan, melt the coconut oil.

Once melted remove from heat.

Stir in the cocoa, maple syrup, vanilla, cinnamon, ginger, coriander & turmeric.

I a small tray, measure out the cashews and sultanas.

Pour over the cocoa mixture and stir.

Spread the mixture out flat.

 

Freeze for 2 hours.

Break into pieces with the tip of a rounded knife.

Enjoy!

Always store in the freezer.

Notes:
  1. I use a metal try to freeze my chocolate. It measures 27cm long x 15cm wide x 2.5cm deep.
  2. Macadamia nuts are a great alternative to cashews.
  3. Desiccated/flaked coconut with sultanas is a great combination.
  4. If you don’t have vanilla extract liquid you can substitute for an extra teaspoon of maple syrup.
